Buenas sugar cane vinegar – also known as sukang iloko – is a mild but distinctive vinegar in Filipino cuisine. It’s often used to make sweet & sour sauces in Filipino cuisine. It is made from fermented sugar cane juice, a process that makes the finished vinegar more sour than sweet, tasting like a lightly vinegared apple juice.

Try using the cane vinegar in meat marinades – sukang iloko has meat tenderising properties as well as a great flavour. You can also use it to make sawsawan – a dipping sauce with sugar, soy sauce, onion, garlic and chilli that no Filipino table is without!

Store in a cool, dry place.
