Dios Baco Pedro Ximenez Sherry

The Oxford 1970 edition of Pedro Ximenez sherry has been matured for around 20 years. Pedro Ximenez sherry is dark mahogany, almost black in colour with an intense aroma of Christmas pudding. It is rich and sweet, with complex notes of chocolate, liquorice and burnt caramel. Serve Pedro Ximenez at room temperature with blue cheese, foie gras, or alongside rich desserts. Also try a splash of Pedro Ximenez sherry over good vanilla ice cream for a sinful treat.

The Bodegas Dios Baco in Jerez has been a winery since 1765. Current owners José Páez Morilla and daughter Alejandra now handcraft small batches of sherry there, all with the Jerez-Xérès-Sherry Designation of Origin.
