Shaoxing rice cooking wine is a Chinese cooking wine made from fermented, glutinous rice with added salt. It is a core Chinese cooking ingredient which has no western substitute, and is used in dishes such as ‘Chairman Mao’s Red Braised Pork’ and ‘Drunken Chicken’. Sometimes known as Shao Hsing wine or simply Chinese Rice Wine, the amber liquid has rich, sherry notes and a dry, sharp taste which enhances flavours without being overpowering. When cooking with this wine be sure to cut down on any other salt in the recipe.
