Washington, in the Pacific Northwest of America, takes a lot of BBQ inspiration from places like Kansas City or South Carolina. However, the north-western climate gives the region plenty of scope for standing out. Washington has an abundance of forests, so there’s lots of wood for smoking food. Cherry and apple are the most popular, giving a fruitier flavour than the hickory smoked flavours of Kansas. And it doesn’t stop at smoking – once harvest season comes around, tangy apple sauces for pork are everywhere.
