Pearl barley is a form of barley which has had its bran and hull removed. In Italy pearl barley is known as orzo, though is not to be confused with orzo pasta. These pearly white oval grains are great for thickening and adding texture to soups and stews. Pearl barley is also the key ingredient in the Italian dish orzotto, a speciality of the Friuli Venezia Giulia region of North East Italy which is made in the same way as a risotto.
