Whole poblano peppers are just the thing for making authentic chile relleno – literally ‘stuffed chillis’. This Mexican dish stuffs whole poblano chilli peppers with cheese and/ or a mixture of spiced minced pork, raisins and nuts. The stuffed peppers are then coated in masa harina corn flour and fried. In the Mexican city of Puebla – the home of the poblano pepper – the chile relleno are served in a tomato sauce.
The whole green poblano chillis have a mild heat. You can also try blending the poblano chillis with jalapenos and tomatillos for a green enchilada sauce.
