Enjoy fried dace with salted black beans straight from the tin, or warm through and use to top plain steamed rice, or stir fried green vegetables.

Dace is also known as ‘mud carp’, and is fished form the Pearl River in China. Whole dace fish are fried and then tinned with soybean oil, black beans, salt & spices.

Canning and preserving dace in this way became popular in the 1950s. Many people from the Pearl River Delta region of China would travel to the south east for work. They were not used the food of Southeast China, so they took fried dace with black beans so they would always have food they enjoyed!
