Gula djawa is a dark, unrefined palm sugar from Malaysia. It has a deep caramel flavour with hints of roasted coffee. The palm sugar is used in Thai, Malaysian and Indonesian desserts and can also be shaved into curries or used to sweeten chilli jam for added depth of flavour.

Gula Djawa is made from tapping the sap from palm trees, boiling it down to a syrup and leaving it to crystallise into a block.
