Roasted gluten, also called seitan in Japanese, is a meat alternative, eaten across China, Japan and Southeast Asia. Add the 1-inch firm cubes of wheat gluten to Chinese hot pots and braised or simmered dishes – the sponge-like gluten will take on flavours from the braising liquid. Or soak in cold water for 2-3 hours and then stir fry together with meat or vegetables.
