Shirataki noodles are incredibly low calorie noodles. The high-fibre noodles contain almost no calories, sugar or fat. They are made from the konnyaku or konjac root vegetable, which is peeled, cooked, pounded, coagulated and then squeezed into noodle-shapes. Shirataki translates as ‘white waterfall’ – a suitable name for the clear, gelatinous noodles which contain 97% water. They have a pleasantly chewy texture, but little taste, so work best when simmered in a rich stock – containing perhaps ginger, soy or miso – which allows the shirataki noodles to take on the surrounding flavours.

The low calorie shirataki noodles come packaged in water, so drain and rinse before using. They do not need cooking, but simmering for just a few minutes before using changes the texture slightly and heat them through – we prefer it like this. Each packet of shirataki noodles serves 1. To store, keep in a cool and dark place. Once opened keep refrigerated and consume on the same day.
