Sichuan Facing Heaven Chillies

Sichuan dried round chillies or facing heaven chillies are a medium-hot, fragrant chilli pepper with a thin skin and citrus notes. The Sichuan round dried chillies are a pantry-staple when it comes to Sichuanese cooking, and are often fried whole in oil at the start of recipes. Sichuan facing heaven chillies are also delicious in piquant pickles, or used to infuse chilli oil.

The facing heaven chilli is chosen above the Sichuan long dried chilli for stir-fried dishes as it is slightly larger so adds volume to dishes. Whereas the hotter Sichuan long dried chillii is used in hot pots.
