Enjoy soba noodles hot or cold with a tsuyu broth or dipping sauce. Soba noodles are made with buckwheat flour as well as wheat flour. The buckwheat flour has an intensely nutty flavour, so many Japanese soba dishes keep other flavours fresh and light. Soba noodles are popularly eaten on New Year’s Eve in Japan, in a dish called toshikoshi soba (New Year Soba). This is a warming soba noodle soup with dashi, mirin and soy sauce (though tsuyu soup base can be used for convenience), and is garnished with fresh spring onions and crispy flakes of tempura batter.

Each bundle of soba serves two people.

Ingredients: wheat flour, buckwheat flour (25.1%), water, salt. Contains allergens: gluten (wheat). Store in a cool, dry place.
