Chaotian chillies, also known as Heaven Chillies, are hot and fragrant chilli peppers. Dried chaotian chillies are a pantry staple in the Sichuan province of China. Fry dried chaotian chillies in oil to release their fragrance. Blend into a paste for sauces, or use the chilli oil to dress noodle dishes.
