Buckwheat is commonly used to make tabbouleh, and the three-pointed grains are often found toasted in Middle Eastern salads. Despite the name, buckwheat grains (groats) are not related to wheat so are gluten free. Simmer in water or stock for 10-15 mins to get a porridge-like consistency and serve alone or as an accompaniment to Middle Eastern dishes. Or coat the buckwheat groats in a little beaten egg or olive oil and toast in a pan to keep the grains separate â use in homemade granola or add to a little stock to make a dish similar to risotto.
