Linseeds – also known as flax seeds – are a popular topping for smoothies, porridge and yoghurt. The golden-brown linseeds have a slightly nutty and earthy flavour.

Grind linseeds in a spice grinder and add to cake batters for a hint of nuttiness and added fibre. You can also use ground linseeds to cut down on the fats in baking – 1 tablespoon of butter, margarine, shortening or vegetable oil can be substituted for 3 tablespoons of ground linseeds. Or use this linseed ‘meal’ for gluten-free baking – make high-fibre bread, or mix with crushed nuts whole seeds and a binding agent to make crackers.

You can also mix ground linseeds with crushed nuts to make a flavourful topping for chicken or fish.
