Gilchesters organic strong white flour is suitable for all kinds of bread making – by hand or machine, for sourdough, soda breads and more. The strong white flour is made from Gilchesters’ tall-straw heritage wheat.

Instead of bleaching the flour, Gilchesters sift it to separate the pale flour from the dark bran. Because they don’t bleach the flour, your finished loaves will look more rustic with a creamier colour.

Every bag of Gilchesters organic strong white wheat flour includes a recipe for a basic white loaf and tips on how to get the best out of your heritage grain flour.

Gilchesters Organics is a family business run by husband and wife team, Andrew and Sybille Wilkinson. Their farm and mill are based just north of Hadrian’s Wall in Scotland. Gilchesters grow organic heritage grains and use a strict crop and cattle rotation system, to ensure their soil is never depleted of essential nutrients and minerals.

After harvesting, Gilchesters use a traditional stone mill to grind the grains into flour. Stone milling preserves the high concentrations of vitamins and minerals within the grains. All of Gilchesters Organics’ flours still contain the precious wheat germ, so they’re higher in fibre than most supermarket flours. The wheat germ is also a great source of vitamin E and essential fatty acids.
