Use It All Loaf

Even if you aren’t a baker, they are the baked good that can be whipped up quickly and easily. This is a base muffin recipe that you can add what you like to. May we suggest that you avoid getting too earthy. Use the fruits or vegetables that are everyone’s favourite and finish off the more delicious pantry strays, such as coconut, chocolate chips, ground spices, seeds and nuts.
I can’t tell you how many lunch box rejected zucchini and bran muffins I have thrown away. Stick to what you know is delicious and these muffins will always be the answer to lunchbox and snack dilemmas.

If you know you know. The Cornersmith poached egg roll was a staple on our cafe menu for more than a decade. It makes the perfect breakfast, brunch, dinner or lunch.
We changed it up every season – switching the relish or chutney, the pickles and the greens. Ham, salami or cheddar were optional add-ons.

Cornersmith Toasted Muesli
Homemade muesli is surprisingly easy to make, and about half the price of buying it! Cornersmith’s Tahini Muesli has obsessive fans. This recipe comes from one of our chefs, Sabine, and was a staple on the cafe menu.
Using tahini means it’s nice and nutty, without being too sweet. It also makes the muesli cook to quite a rich dark brown, so don’t be alarmed and think it’s burning while you’re toasting it.
Use this recipe as a guide only; you can switch up the nuts, seeds, and puffed rice for other ingredients. Just keep the overall quantities the same.

There’s a tendency to think of herbs as only a garnish, a little bit of pretty green on top of a dish. At Clove, we believe that if you’re going to use herbs, we want you to taste them, and if you’re going to buy herbs, we want you to use the whole bunch.
Our herby fritters and green goddess sauce will make your herbs shine. So, if the garden is heaving with mint, dill, or parsley, or there was a 2-for-1 deal at the grocer, this is the recipe to save.
Fritters are a 24/7 type of meal, so make extra and keep them in the fridge. Breakfast, morning tea, lunch, afternoon tea, dinner, drinks, a midnight snack – every time is fritter time. Plus, the green sauce lasts well and is delicious as a salad dressing, drizzled over grilled meats, or dolloped onto baked potatoes.

These Savoury Sourdough Breakfast Muffins are the perfect solution for busy mornings. Packed with pumpkin, feta, sourdough discard, Greek yoghurt, and rosemary, they’re portable, gut-friendly, and delicious whether served hot or cold. Tender chunks of roasted pumpkin, creamy nuggets of feta cheese, and a hint of garlic, rosemary and thyme, combine within a fluffy, sourdough-infused muffin for a flavor explosion with every bite. Shakshuka
Breakfast for dinner should be embraced with open arms. And this 30-minute, one-pan, tomatoey baked eggs dish is perfect for a simple mid-week meal. It’s also a great recipe for a weekend breakfast or easy lunch.
Shakshuka translates simply to ‘mixture’ and is usually a spiced tomato and capsicum base with perfectly set eggs nestled into the sauce. You can be experimental with the saucy base – using leftover passata and a little chorizo, ratatouille, or a tomato and lentil stew to cook the eggs in.
We’ve topped this version with chopped parsley and crumbled feta, but you could also top it with goat’s cheese and dill or shaved parmesan and torn basil. So, use what’s in the fridge and cook this easy recipe – it will be so much more satisfying than having a bowl of cereal for dinner!

Shakshuka with Mushrooms, Kale, Radicchio, and Zaatar
Shakshuka means “a mixture” – a staple from Tunisia in North Africa and very common in variation across the Middle East. It’s simple, humble food that is just so tasty. This recipe uses the bare minimum and comes together in 20 minutes. You can cook the red sauce longer and let the flavors develop if you want that extra level of depth. Add any veggies you have in your fridge – top it off with cheese or some spicy oil. Happy days.

Get breakfast sorted for the week with this no cook, one bowl wonder overnight bircher muesli. Perfect as a grab and go breakfast, this filling morning staple is perfect for the busy person.

Strawberry, Rhubarb & Rose Jam
This is a perfect fruity jam for buttered toast, for scones, to use in the middle of a sponge cake, or to make jam drops with. It’s a softer-set jam, with a bright colour and a nice sweet but tart flavour.

The Best Baked Beans
Beans on toast is an excellent meal. We eat these baked beans for breakfast, lunch, and dinner.
The trick with this recipe is to resist adding anything extra! The flavour here comes from the slow-cooking.

Tired Berry Sauce
Spoon this sauce over ice cream or yoghurt, add it to smoothies and milkshakes, and serve it with cakes, crêpes, French toast and muesli. Make it when berries are cheap and ripe, or when they’re starting to go a bit mushy in the fridge.

Use It All Loaf
So much better than banana bread! This loaf is a staple at Cornersmith and my home kitchen. It’s one of our most popular recipes, because you can use whatever grated vegetables or fruits you have – try grated carrot, grated pear or grated beetroot. Plus you can use up bits and pieces from the pantry -nuts or seeds, choc chips or dried fruits, it all works. And it’s fun coming up with different combinations.
Just avoid very over-ripe fruit as it will make the loaf too wet!
Eat this for breakfast, pop it into lunchboxes or serve it with tea in the afternoon.
