Serve with hummus, flatbreads, a pickle, and a simple tomato salad. Then eat the leftovers for lunch the next day.

It’s great as part of a shared meal with lamb skewers and a Greek-style salad or piled on toast with a fried egg. It’s a good budget-friendly recipe that lasts well in the fridge and will keep you nourished throughout the week.

Chimichurri is a tangy herby green sauce originating from Argentina and is usually served with grilled meats. It’s bright, zesty and fresh and is equally delicious with crispy fried potatoes.
Parsley, coriander, capers, garlic, cumin and chilli make this potato salad a flavour sensation! We’ve made it easy in this recipe and given you a simple chopped chimichurri, so there’s no need to get out the food processor.
Perfect as a side dish for barbecues, it pairs beautifully with grilled meats, fish, or as part of a vegetarian feast.

Chinese Five Spice Honey Soy Chicken
This Chinese five spice honey soy chicken is an absolute crowd pleaser and you can marinate this ahead of time/ overnight to let the flavors really develop. Perfect to cook on the BBQ and serve with rice and veggies or as protein in a salad.

Although there is a bit more involved than in a plain pilaf, this is a hearty treat and worth the effort. It is traditionally a special occasion rice dish.

and, happily, both are around during autumn and into winter. Sprinkled with feta cheese and served with some cooked grains or bread, this dish makes a delicious vegetarian meal, and is also the perfect side dish for roast chicken or pork.

Cotoletta
A weekly request and staple in my household and always a favourite. Mum, the Cotoletta master, would make an egg-garlic mixture and then coat with breadcrumbs, deep-frying until golden brown for the ultimate crunchy memory bite!

Cottage Pie
It’s cold outside, so warm up the kitchen with this hearty cottage pie. A simple yet rich beef and vegetable filling is topped with creamy mash and baked until golden. It hits the spot if you’re feeding kids, housemates or dinner party guests, they’ll all thank you for a comforting home-cooked meal (well, maybe not the kids… but they’ll ask for the recipe when they grow up).
This recipe is a good base you can build on, adding in extra veggies like grated mushrooms, zucchini or a few handfuls of frozen peas. You can make the filling on the weekend and easily turn it into a pie when you get home from work on a Tuesday night.
Serve it with a side of green beans or a big green salad, and enjoy the leftovers for lunch the next day.
If you’re in your meal prepping era, double the recipe and make two pies. Bake one for dinner tonight, and freeze the other one, unbaked and well wrapped, for a night when don’t have the energy to cook.
