I love this recipe because it uses all the green things in the fridge that have a relatively short life span: snow peas, asparagus, spinach, lettuce, watercress, and peas. Feel free to throw in thinly sliced fennel, green beans or small broccoli florets.
Here they are gently cooked in stock or white wine with garlic and pepper. It’s a light, clean, and perfect green side to serve with baked fish, roast chicken, or an omelette and toast.

Making your own homemade Labneh is not only super simple and delicious, it’s so much cheaper to do! It is essentially strained yogurt, and the longer you keep straining it, the thicker the labneh will be. You can store any excess labneh in the fridge for up to 2 weeks. Serve it with fresh mint or oregano and plenty of good quality extra virgin olive oil. Labneh requires a minimum of 24 hours to strain, so ensure you keep that in mind before preparing and serving.

Mediterranean Baked Fennel

We’ve added some chilli flakes and red wine vinegar to really make these bad boys sing. You want as much crisp and char as you can get, so crank up the oven and get roasting. They make a great side; pile them onto a lentil stew or serve them with polenta and a hearty ragu.

Roasted Capsicum (Peperoni Arrostiti)
Nothing looks better on an antipasto board than roasted capsicums. Rich and colourful, your guests will be impressed knowing they are homemade. Make sure you have enough bread on hand so that every last delicious drop of garlic and capsicum-infused oil can be mopped up.
Peperoni can also lift the calibre of a fresh panino and are a perfect accompaniment for sausages or cotolette (schnitzel).
These are best served at room temperature. They will last for up to 7 days in the fridge.

This delicious side from The Cornersmith cookbook was often on the menu in Autumn. It brings together all the best things of the season: eggplants, walnuts, and pomegranate. We would serve it with eggs and toast, or as a dip spread on bread. It would also make an amazing side dish to grilled lamb or a nice oily fish.

Roasted Fennel with Citrus Zest and Chilli
We’re very comfortable roasting pumpkins and potatoes, but why not try roasting fennel? When raw, fennel is crunchy, fresh, and full of aniseed flavour. When cooked, it’s like a different vegetable: subtle, mellow, and sweet. In this recipe, the fennel wedges are coated in orange juice and zest, chilli flakes, and plenty of olive oil, and roasted until tender and caramelised at the edges.

Nothing looks better on an antipasto board than roasted capsicums. Rich and colourful, your guests will be impressed knowing they are homemade. Make sure you have enough bread on hand so that every last delicious drop of garlic and capsicum-infused oil can be mopped up.
Peperoni can also lift the calibre of a fresh panino and are a perfect accompaniment for sausages or cotolette (schnitzel).

Roasted Capsicum With Garlicky Dressing
Homemade roasted capsicums are sweet, smokey, and silky. They are super easy to roast in the oven and I share a delicious garlicky pickling dressing that takes them to the next level. Use in salads, buddha bowls, sandwiches, pasta dishes, or as a tasty condiment.

Roasted Eggplant & Ricotta with Walnuts & Pomegranate
This delicious side from The Cornersmith cookbook was often on the menu in Autumn. It brings together all the best things of the season: eggplants, walnuts, and pomegranate. We would serve it with eggs and toast, or as a dip spread on bread. It would also make an amazing side dish to grilled lamb or a nice oily fish.

Roasted Fennel with Citrus Zest and Chilli
We’re very comfortable roasting pumpkins and potatoes, but why not try roasting fennel? When raw, fennel is crunchy, fresh, and full of aniseed flavour. When cooked, it’s like a different vegetable: subtle, mellow, and sweet. In this recipe, the fennel wedges are coated in orange juice and zest, chilli flakes, and plenty of olive oil, and roasted until tender and caramelised at the edges.
Serve roasted fennel like you would any other roasted vegetable. It’s delicious as a side for grilled meats or fish, with a lentil or chickpea stew, with some focaccia and labneh, or on a burger. And if you have leftovers, you can use it in a frittata or omelette later in the week.

Sautéed Silverbeet Stems
Often we only use the main part of a vegetable and throw away the stems, peels or leaves. Silverbeet stems can end up in the bin without much thought. If you’ve used silverbeet leaves in a recipe or salad, don’t throw away the stems, make this recipe!
Adding yoghurt in this dish makes it tangy and creamy without being rich. Serve with fish, falafel or lamb skewers, a chickpea stew and flatbreads.

Simple Apple, Dill and Cabbage Slaw
Salads don’t need to be complicated to impress. This apple, dill, and red cabbage slaw is ideal as a weeknight side or, doubled or tripled, for a dinner party.
Serve it alongside steak, salmon, or with a hearty lentil stew. You can even pile it on top of a baked potato with sour cream for a delicious twist.

Spinach in Peanut Sauce
Green vegetables and nuts are a perfect pairing. Think of steamed green beans and almonds; roasted brussels sprouts and hazelnuts, a broccoli and cashew stir fry; even pesto is greens and nuts.
This dish is a riff on the Japanese side dish gomae, usually it’s made with a pounded sesame paste, but here we’ve used peanut butter as the base, making it more savoury with soy sauce, rice wine vinegar and sesame oil.
Serve warm or cold with rice and grilled fish; with teriyaki chicken or noodles.
And remember, greens should never be boring, so make them the hero of the meal.

Spring Greens Medley
I love this recipe because it uses all the green things in the fridge that have a relatively short life span: snow peas, asparagus, spinach, lettuce, watercress, and peas. Feel free to throw in thinly sliced fennel, green beans or small broccoli florets.
Here they are gently cooked in stock or white wine with garlic and pepper. It’s a light, clean, and perfect green side to serve with baked fish, roast chicken, or an omelette and toast.

Syrian Baba-Ghannouj
If I were to translate the word ghannouj, it would mean “spoiled”—much like a little girl pampered with her favorite toys and treats. Similarly, we Syrians spoil our Baba-Ghannouj by enriching it with fresh ingredients, pomegranate seeds, and walnuts.
The combination of smoky eggplant, juicy tomatoes, the sweet-tart depth of pomegranate molasses, and the crunch of walnuts and pomegranate seeds creates an explosion of flavors in every bite.
What makes baba ghannouj special is its versatility—it can be enjoyed as a dip and a salad. Whether served as part of a vibrant mezza platter or alongside a sizzling barbecue, it always enhances the dining experience.

These snow peas are cooked with ginger, soy, and a little rice wine vinegar, but would be equally delish with chili paste, salt, and pepper. Try this method with other tender greens, like sugar snap peas or spinach.
