Stuffed Eggplants (Melanzane Ripieni)
SKU: N/AMelanzane Ripieni, or Stuffed Eggplants, are a cherished dish in southern Italy, particularly popular for their flavorful and hearty combination of ingredients. This recipe calls for small eggplants, ideally on the smaller side, to be used as they are easier to handle and cook more evenly. The filling is a savory blend of pork and veal mince combined with fresh parsley, basil, and an optional touch of garlic for those who prefer a hint of its robust flavor.
The eggplants are first boiled to soften the insides before they are hollowed out. The flesh is then cooked with onions and herbs until it reaches a soft, homogeneous consistency. This cooked mixture is combined with breadcrumbs, parmesan or pecorino cheese, and eggs to create a rich, flavorful filling. The mixture is then stuffed back into the eggplant shells and topped with a simple sauce made from passata and herbs, before being baked until tender. This traditional dish is highly versatile, making it suitable for enjoying warm directly out of the oven or cold the following day. It also holds up well to freezing, allowing for convenient preparation in advance for future cravings. Perfect for sharing a taste of nonna’s kitchen, Melanzane Ripieni embodies the heart and soul of home-cooked Italian cuisine.

Stuffing vegetables might sound fiddly and hard, but it’s surprisingly easy and well worth it. To make things easier, you can prepare the filling a day in advance, which makes the final assembly a breeze.
Serve these hot or at room temperature with some grilled flatbreads and a yummy garlicky yoghurt. As a summer staple in the Clove Kitchen, we can vouch for how satisfying this meal is.

You can leave the ratatouille nice and chunky, or blitz it in the food processor if you’re trying to disguise any vegetables.

Plus you can use up bits and pieces from the pantry -nuts or seeds, choc chips or dried fruits, it all works. And it’s fun coming up with different combinations.
Just avoid very over-ripe fruit as it will make the loaf too wet!
Eat this for breakfast, pop it into lunchboxes or serve it with tea in the afternoon.

Taco Bowl
Really, taco bowls can be whatever you want them to be. The basic formula is rice, beans, meat, and veg with optional sour cream or grated cheese.
This one is vibrant, colorful, and packed with flavor. In our opinion, the pickled corn and black bean salsa is the hero of this bowl. It’s tangy, zesty, and really addictive, especially when combined with tender slices of marinated skirt steak, avocado, and a dollop of sour cream.
Make this bowl your own. It would be extra delicious with a tomato rice base or with chili lime grilled fish instead of steak.
Teriyaki Prawn Udon
These delicious teriyaki prawn udon noodles are packed with flavour and loads of vegetables. The sauce will have you going back for more!

Thai Green Chilli Mussels
This is my delicious Thai green chilli mussels recipe. Arguably my favourite flavour of mussels. Happy cooking!

The Best Baked Beans
Beans on toast is an excellent meal. We eat these baked beans for breakfast, lunch, and dinner.
The trick with this recipe is to resist adding anything extra! The flavour here comes from the slow-cooking.

Tiramisù Semifreddo
If you’re looking for a delicious twist on a classic dessert, this Tiramisù Semifreddo is a game-changer. It has the delicious coffee and mascarpone flavours you love in a traditional Tiramisù but transformed into a refreshing, sliceable ice cream treat—it’s truly irresistible!
Pair this exquisite dessert with a chilled glass of coffee liqueur for an extra hint of indulgence… and possibly a very late night thanks to all the espresso.

Tired Berry Sauce
Spoon this sauce over ice cream or yoghurt, add it to smoothies and milkshakes, and serve it with cakes, crêpes, French toast and muesli. Make it when berries are cheap and ripe, or when they’re starting to go a bit mushy in the fridge.

This would have to be one of my favourite Italian delights.

A modified version of Ribollita, a traditional Tuscan Bean Soup, made without stale bread for a lighter touch. This hearty soup features onion, garlic, tomatoes, fresh rosemary, cannellini beans, and silverbeet simmered in stock. The dish is seasoned with Parmesan cheese, salt, pepper, and served with grated Parmesan and pepperoncino for a touch of heat.

Ultimate Vegetarian Pasta Bake
This veggie-loaded pasta bake is one of my family’s favourite dinners, especially when we want a plant-based meal. It’s filled with vegetables like roasted butternut squash, mushrooms, capsicum, and spinach, paired with a delicious tomato sauce and baked with feta and Tasty cheese. It’s an incredibly comforting dinner that is also nutrient-dense.

Use It All Loaf
So much better than banana bread! This loaf is a staple at Cornersmith and my home kitchen. It’s one of our most popular recipes, because you can use whatever grated vegetables or fruits you have – try grated carrot, grated pear or grated beetroot.
See tips below for some of our favourite flavour combinations.

Vanilla and Maple Glazed Roast Chicken
I had often thought that vanilla would roast with meats beautifully when combined with the right flavours. Here I pair vanilla with maple syrup, chilli, thyme, olive oil, and red wine vinegar to roast the perfect chicken. It really is a very easy recipe and one that will shine on your Christmas lunch table.

Vegetable and Barley Soup with Sauerkraut
Packed with wholesome veggies, hearty barley, and tangy sauerkraut, this soup is a nourishing meal perfect for any weeknight. Easy to make and full of flavour, this soup brings comfort and health to your table every time. Vegetarian Lasagna
A lasagna has three parts: the filling, the béchamel, and the pasta sheets. They are a weekend project, not a quick Tuesday night dinner. However, if you prep the elements beforehand, you can assemble a lasagna pretty quickly. This mushroom and spinach lasagna is a vegetarian show-off dinner.
It’s earthy, rich, and full of big flavours. It’s the meal to make when you want to show someone how much you love them. You can cook the ragu and the spinach a few days in advance; however, we suggest making the parmesan béchamel fresh. Serve this to your guests with a simple green salad and wait for a standing ovation.

Warm Arugula Salad with Roasted Asparagus
This salad came to life a few years ago, on a night when I improvised with whatever leftovers I had in my fridge. To my surprise, this simple mix turned into a real hit! Ever since, every time I serve it, my guests ask me for the recipe. So here’s this spontaneous creation that has become a classic in my home!
PS : You can see parmesan cheese in the picture but I highly recommend Feta Cheese instead!

Spicy Sausage Pasta 🌶️
The perfect pasta for your next dinner party or date night.
With a select few ingredients, this recipe is budget-friendly and bursting with flavour.
Top with even more chilli, Parmesan, or stracciatella for a little extra something ✨🌶️

Spicy Tahini Fish (Samkeh Harra)
Samkeh Harra is traditional to the region of Tripoli in Lebanon, and is essentially fish baked and poached in a spicy, silky tahini sauce. It’s effortless to make and best eaten with rice to soak up the tahini. White flesh fish is preferred, so I usually rotate between snapper and blue eye cod fillets.

Spicy Tofu & Vegetable Tray Bake
Scared of stir-frying? Give this vegetarian tray bake a go. All the flavours of a stir-fry with some extra punch and none of the splatter – just put it in the oven and relax.
If you have some ginger that needs using, we’ve added a quick pickled ginger recipe to serve on top, but feel free to skip it or buy pickled ginger if you’d prefer.

Spinach and Ricotta Cannelloni
Cannelloni, meaning large tubes, is one of our favourite stuffed pasta dishes. This recipe brings an impressive and comforting meal to the table – pasta tubes filled with vibrant green spinach and creamy ricotta, all baked in a bright tomato sauce. It’s perfect for dinner parties and family gatherings. We highly recommend using fresh ricotta from the delicatessen for a smoother, lighter filling, as often the pre-packaged tubs have a grittiness and heaviness that weighs down the dish.
Spinach and Ricotta Cannelloni is not only delicious and nutritious but also make-ahead-friendly. It’s on high rotation in the Clove Kitchen, and we love the leftovers for lunch the next day. Save it to your favourite dinners folder; it’s a real winner!

Spinach and Ricotta Dumplings in Lemon Butter Sauce
These ricotta dumplings are the near impossible combination of light and luxurious. With their delicious coating of butter sauce, you will hardly notice how easily they slide down until you are devastated they are all gone.
This recipe comes from Cornersmith’s third cookbook Use it All.

Spinach in Peanut Sauce
Green vegetables and nuts are a perfect pairing. Think of steamed green beans and almonds; roasted brussels sprouts and hazelnuts, a broccoli and cashew stir fry; even pesto is greens and nuts.
This dish is a riff on the Japanese side dish gomae, usually it’s made with a pounded sesame paste, but here we’ve used peanut butter as the base, making it more savoury with soy sauce, rice wine vinegar and sesame oil.
Serve warm or cold with rice and grilled fish; with teriyaki chicken or noodles.
And remember, greens should never be boring, so make them the hero of the meal.

Spinach Rice
Packed with vitamins and minerals, this spinach rice is the perfect way to sneak in some greens to your mid-week meals! It’s buttery and delicious!

Spring Greens Medley
I love this recipe because it uses all the green things in the fridge that have a relatively short life span: snow peas, asparagus, spinach, lettuce, watercress, and peas. Feel free to throw in thinly sliced fennel, green beans or small broccoli florets.
Here they are gently cooked in stock or white wine with garlic and pepper. It’s a light, clean, and perfect green side to serve with baked fish, roast chicken, or an omelette and toast.

Spring Greens Pasta
It’s spring! That means it’s time to embrace asparagus every day. This fresh and vibrant green pasta is perfect for a light dinner or simple lunch. Zucchini, peas, basil, and a bunch of asparagus mean you’ll get all your daily greens in one dish. All brightened up with lots of lemon, chilli flakes, and of course plenty of Parmesan cheese.
Be free with your greens – add extra asparagus if you have it, use up that tired zucchini lurking in the crisper, swap basil for parsley, or toss in green beans instead of peas. Goat cheese, crumbled feta, or fresh mozzarella would all be welcome on this plate.
It takes 30 minutes to make, packs in loads of greens, and heaps of flavour – this simple pasta will certainly add a spring to your step this week.

Spring Risotto
This risotto is a great way to use up all the spring vegetables in your fridge. Seasoned to perfection, I love to make this dish for an easy Sunday meal.

Spring Vegetable Chicken Soup
A clear, pretty soup that celebrates all the goodness of springtime: peas, asparagus, broad beans, herbs and baby carrots, with extra crunch and nuttiness from the sprouts. This soup was a favourite on the Cornersmith menu.

Steak with Chimichurri
Perfectly cooked steak with a tangy herby chimichurri sauce is the perfect dinner. I serve this with a simple tomato, red onion vinaigrette and some crusty bread or a potato dish.
For tenderness the steak is brined overnight, however if you’re short on time a two hour brine will do the job.

Sticky BBQ Chicken + Red Cabbage Salad
This sticky barbecue chicken recipe features the rich flavours of blackstrap molasses and tangy Dijon mustard. Serve up with a fresh cabbage salad.

Sticky Toffee Pudding
Hailing from the 1970s and reaching peak popularity in the ’90s, this pudding now sits alongside the likes of lemon delicious, rice pudding and chocolate fondants as a classic. Sweet, sticky and completely addictive, it is always a crowd-pleaser.

Strawberry Macadamia Crumble
This strawberry apple crumble is all about that golden, crunchy topping—made even better with buttery, toasty macadamia nuts. They add the perfect bit of crunch and richness to balance the jammy, sweet-tart fruit underneath. It’s the kind of dessert that feels effortlessly special, whether you’re serving it warm with ice cream or sneaking a spoonful straight from the dish (no judgment!). If you love a classic crumble but want to take it up a notch, the macadamias make all the difference.

Strawberry, Rhubarb & Rose Jam
This is a perfect fruity jam for buttered toast, for scones, to use in the middle of a sponge cake, or to make jam drops with. It’s a softer-set jam, with a bright colour and a nice sweet but tart flavour.

Stuffed Eggplants (Melanzane Ripieni)
Melanzane Ripieni, or Stuffed Eggplants, are a cherished dish in southern Italy, particularly popular for their flavorful and hearty combination of ingredients.

Stuffed Peppers
At Clove, we love to sing the praises of seasonal vegetables. When the peppers are shining red, we start stuffing them. If you’re looking for a standout meal for a family dinner or an impressive dish to take to a friend’s gathering, give these Stuffed Peppers a try. Imagine sweet charred peppers filled with delicious spiced meat and rice, pine nuts, and lots of fresh herbs, then oven-baked to perfection in a rich tomato sauce – it’s a beautiful dish – colourful, comforting, and oh-so nourishing.

Summer Harvest Lasagne
This lasagne is gobbled up every time it hits the table and it appears the kids haven’t cottoned on to the fact that it’s full of their most-hated vegetables – eggplants and zucchini!
The base is a ratatouille, which you need about 3-4 cups of. We suggest making a big batch of ratatouille on the weekend and then make this lasagne a day or two later. Most of the work is done, so all you need to do is assemble and cook.
You can leave the ratatouille nice and chunky, or blitz it in the food processor if you’re trying to disguise any vegetables.

Summer Pavlova
Nothing says summer celebration like a homemade pavlova. This family recipe is tried and tested by multiple generations, so we know it works! It’s easy to make and charmingly rustic, so there’s no need to be afraid. When piled high with cream and beautiful summer fruits, no one cares about a little crack or a slightly wonky circle.
Before you get started read the Author’s notes below for pavlova tricks and tips.

Syrian Baba-Ghannouj
If I were to translate the word ghannouj, it would mean “spoiled”—much like a little girl pampered with her favorite toys and treats. Similarly, we Syrians spoil our Baba-Ghannouj by enriching it with fresh ingredients, pomegranate seeds, and walnuts.
The combination of smoky eggplant, juicy tomatoes, the sweet-tart depth of pomegranate molasses, and the crunch of walnuts and pomegranate seeds creates an explosion of flavors in every bite.
What makes baba ghannouj special is its versatility—it can be enjoyed as a dip and a salad. Whether served as part of a vibrant mezza platter or alongside a sizzling barbecue, it always enhances the dining experience.

It also holds up well to freezing, allowing for convenient preparation in advance for future cravings. Perfect for sharing a taste of nonna’s kitchen, Melanzane Ripieni embodies the heart and soul of home-cooked Italian cuisine.

Sweet Asian Chicken
This is a cracker of a dish! Perfect for a quick week night dinner that the whole family will enjoy. This has all the four S’s of asian cooking that makes it perfectly balanced. Sweet, salty, sour and spicy!

Sweet Potatoes & Chickpeas with Tahini
Enjoy this Mediterranean flavour bomb. A perfect balance of sweet potatoes, crispy chickpeas, and a zesty tahini, garlic herb dressing!

Swordfish Skewers with Green Tahini
The simple fish skewer, marinated in citrus and spices – enjoy it as a side or pair it with pita bread pockets and some fresh greens!

Syrian Sweet Cheese Rolls (Halawet El-Jeben)
This dessert, infused with orange blossom water, is prepared with semolina and cheese and filled with ashtah (a thick clotted cream that is popular throughout the Middle East, made by boiling fresh milk and skimming off the thin skin that forms on its surface). You can buy ashtah from Middle-Eastern supermarkets or dessert shops; however, because ashtah is difficult to come by in Australia and making it at home takes time, I have substituted an easy recipe for you. In an alternative version of halawet el-jeben, the semolina is mixed with sugar syrup first, then the cheese is added. Both versions are perfectly okay; choose the one that is most convenient for you.

Torta Caprese
Torta Caprese is a beautiful chocolate, and gluten-free, cake straight from the island of Capri. Easy to make, with a fudgy and soft centre.

Torta Della Nonna
Torta della Nonna: A classic Italian dessert with a delicate shortcrust pastry, creamy custard filling topped with crunchy pine nuts.
This would have to be one of my favourite Italian delights.

Tuscan Bean Soup

We’ve used carrot, cauliflower and potato in this recipe, but it is an adaptable recipe so feel comfortable to use other vegetables like leeks and sweet potato. If you don’t have barley, you can replace with brown rice or even brown lentils.
