SKU: N/AThis Crispy Pan-Fried Tofu recipe is delicious and simple to make.
Tofu has been gaining popularity in recent years as a delicious and healthy alternative to meat.

In plenty of Asian cultures, tofu is a staple in people’s diets and not necessarily used as a meat substitute. It is often braised, used in soups, or pan-fried with sauce.

Glazed Christmas Ham
SKU: N/AGlazing a ham for Christmas is not as hard as it looks! It’s an impressive centrepiece, and so much easier than roasting a turkey. Because the ham is already cooked, all you’re doing is glossing it in the oven with the glaze.
Here, we’re using a simple marmalade and mustard glaze, but you can fancy it up with a splash of whiskey or some cayenne pepper.
To make things easier on Christmas morning, you can make the glaze in advance, storing it in the fridge for a few days. You can also remove the rind and score the fat the day before; just make sure to re-cover it with the skin and a slightly damp tea towel to stop it from drying out.
Bringing a glazed ham to Christmas lunch gives you a special kind of kudos. So go on, be the ham guy this year!

We’ve used parmesan here, which could be substituted for a little goat cheese or feta. Get your frittata technique down, and learn to become an intuitive, freestyling kind of cook. You’ve got this!

Fruit Mince Tarts
Homemade fruit mince tarts are absolutely worth the effort. This version of fruit mince is easy to make, sweet and spiced, and generously spiked with brandy.
The mince gets better and better over time, so you can make it up to a month in advance to take some of the pressure off.
We’ve included a simple shortcrust pastry here, but feel free to buy one if you’re running short on time. Some of the better brands use butter instead of margarine and are palm oil free.

Garlic-Lemon Beans with Eggs (Ful Mudammas)

Garlicky Green Beans
Sometimes it’s the simplest of dishes that are the most memorable. This is our absolute favourite way to cook green beans – steamed in a splash of water, then richly flavoured directly in the frypan. It only takes 10 minutes, but delivers restaurant-quality vibes.
The classic flavours of garlic, lemon and thyme make these beans shine, but also ensure they pair well with most mains. You can use this same method to cook broccolini, thinly sliced carrots, or snow peas.

Glazed Christmas Ham
Glazing a ham for Christmas is not as hard as it looks!

Glazed Salmon and Rice Bowl
Sticky, spicy, glossy salmon – yes please! This bowl feels Saturday night fancy but is Tuesday night easy. The oven-baked fish gets a sweet and spicy kick from a simple gochujang glaze. If you haven’t used gochujang before, you’re in for a treat. It’s a slightly sweet fermented chili paste used in Korean dishes. Available at most supermarkets. You’ll love having it in the fridge, see below for more uses.
We serve this with black rice for a bit of drama and a crunchy cabbage and sesame slaw, but you could also serve with a plain rice and a yummy cucumber salad.

Gluten Free Plum & Raspberry Upside Down Cake
There is real joy in baking a beautiful upside-down cake, where meticulously placed fruit transforms into a stunning feature when the cake is inverted after baking.
This recipe is perfect for home cooks who love fruit forward desserts. In this spiced cake recipe, juicy plums and tart raspberries are complemented by the warmth of cardamom and tang of yogurt.
While this cake is delicious simply removed from the tin and enjoyed, it is further elevated to dinner party status when finished with a sprinkle of the sweet dukkah.

Gluten-free Lamington Fingers
With these moist and flavoursome lamingtons, people with gluten or wheat intolerance won’t have to miss out on this Australian classic, and no one else will notice they are gluten-free.

These cakes are a play on the original (and wonderful) Middle Eastern Orange Cake from the one and only Elizabeth David. Making use of seasonal mandarins and with the addition of coconut and polenta, this version is also flourless and gluten-free.

Gnudi
Gnudi originate from Tuscany. They are delicate dumplings made usually from ricotta, but also mixed with spinach. “Gnudi” means “naked” in Italian, as they are like the filling of ravioli without the pasta. They are traditionally served with butter, sage, or a light tomato sauce. This is my way.

Greek Meatballs with Summer Vegetables
A tray of meatballs is a love language in itself. These Greek-style meatballs really hit the spot — they’re juicy and full of flavour, packed with parsley, feta, and paprika. Nestled into a bed of summer vegetables and baked in the oven, it’s almost a one-tray dinner. Buy some flatbreads and invite your besties over for dinner.

Greek Moussaka
This moussaka recipe is the ultimate comfort meal, with delicious layers of roasted eggplant and rich spiced meaty sauce, topped with cheesy béchamel. It takes a bit of time to come together but it is definitely worth it – a true labour of love! Keep in mind you need to salt the eggplants, if you skip this step you’ll end up with a very wet dish. The minimum salting time is 30 minutes, although you can leave them salting overnight if it makes things easier.
We’ve used beef mince here but you could swap out for lamb mince for a more authentic moussaka.

Green Curry Paste (From Scratch)
A simple recipe for Thai green curry paste made from scratch.
This recipe uses a mortar and pestle, but if you don’t have one, you can also use a food processor. Store in the fridge for up to two weeks or freeze for up to three months.
This amount of curry paste will be enough to make two curries. Try a tofu and green bean curry, a chicken curry or eggplant curry.

Cornersmith Toasted Muesli
Homemade muesli is surprisingly easy to make, and about half the price of buying it! Cornersmith’s Tahini Muesli has obsessive fans. This recipe comes from one of our chefs, Sabine, and was a staple on the cafe menu.
Using tahini means it’s nice and nutty, without being too sweet. It also makes the muesli cook to quite a rich dark brown, so don’t be alarmed and think it’s burning while you’re toasting it.
Use this recipe as a guide only; you can switch up the nuts, seeds, and puffed rice for other ingredients. Just keep the overall quantities the same.

Cotoletta
A weekly request and staple in my household and always a favourite. Mum, the Cotoletta master, would make an egg-garlic mixture and then coat with breadcrumbs, deep-frying until golden brown for the ultimate crunchy memory bite!

Cottage Pie
It’s cold outside, so warm up the kitchen with this hearty cottage pie. A simple yet rich beef and vegetable filling is topped with creamy mash and baked until golden. It hits the spot if you’re feeding kids, housemates or dinner party guests, they’ll all thank you for a comforting home-cooked meal (well, maybe not the kids… but they’ll ask for the recipe when they grow up).
This recipe is a good base you can build on, adding in extra veggies like grated mushrooms, zucchini or a few handfuls of frozen peas. You can make the filling on the weekend and easily turn it into a pie when you get home from work on a Tuesday night.
Serve it with a side of green beans or a big green salad, and enjoy the leftovers for lunch the next day.
If you’re in your meal prepping era, double the recipe and make two pies. Bake one for dinner tonight, and freeze the other one, unbaked and well wrapped, for a night when don’t have the energy to cook.

My Coconut Cream Carbonara recipe with Bacon, Mushroom and Peas is a lighter and dairy-free alternative. So whether you’re following a dairy-free lifestyle or simply looking to switch up your pasta game, this recipe is a must-try. The additions of zest and juice of a lemon and a small pinch of nutmeg bring freshness and complexity, balancing the richness of the coconut cream and the savoury notes of the bacon and mushrooms. The dish can also be made vegan-friendly by omitting the bacon and egg yolk, and instead adding a sprinkle of nutritional yeast for added depth of flavour.

Crispy Pan-Fried Tofu with Sauce
This Crispy Pan-Fried Tofu recipe is delicious and simple to make.
Tofu has been gaining popularity in recent years as a delicious and healthy alternative to meat.
However, tofu is often disliked because it can be dry, bland, and tasteless. The problem here is that people cook tofu like they would a piece of meat, which isn’t necessarily the ideal way. Tofu needs to be cooked differently from meat.
In plenty of Asian cultures, tofu is a staple in people’s diets and not necessarily used as a meat substitute. It is often braised, used in soups, or pan-fried with sauce.

Crispy Pork Belly Roast
This recipe is on high rotation at our house!
Whether you’re serving this with baked potatoes and veggies, or slicing it up and making bahn mi with crispy bread… it’s always a hit with family and friends.
Whilst I roasted the belly in a wood fired oven, you can get the same results in a conventional oven.
To get the skin super crispy, it’s best to prep the belly the day before the cook. This will give the meat the opportunity to soak in the marinade and let the skin dry up to give you that crispy delicious crackling!

Crunchy Honey Cornflake Chicken
This healthier version of fried chicken is a personal favourite of mine. The sweetness from the Crunchy Nut Cornflakes makes this dish a bit of a banger! If you can find un-crumbed chicken schnitzel at the shop use that to save time and fuss. Otherwise get the meat mallet out and start thinking about your ex lover whilst you smash the chicken breast.

The hero of a great Fattoush salad is the bold and tangy flavours of the pomegranate dressing and the crunch of the fried bread. I often mix things up with the salad ingredients depending on what I have in the fridge and what’s in season. Don’t be afraid to use fresh parsley, oregano, or capsicum and arugula (rocket).

Fish Cakes
A family favourite fish cake recipe using leftovers. This version uses leftover cooked fish, leftover mashed potato, and whatever vegetables and herbs are hanging around in the fridge. They’re simple to make, nourishing, and comforting. Serve them with aioli or tartare sauce, crunchy lettuce, and crunchy bread.
You’ll need about 1.5-2 cups of mash. If you don’t have leftover mash, then make a batch using 400g of potatoes.

Flourless Chocolate & Hazelnut Cake
Rich but light at the same time, this cake is indulgent without being overwhelmingly so, thanks to the light texture provided by the egg whites. It makes a perfect dessert served with thick cream or ice cream and fresh berries when in season. However, don’t underestimate how blissfully suitable a slice in the afternoon with tea or coffee can be.

Frakkeh (Raw Lamb Tartare)
Frakkeh, a version of Kibbeh Nayyeh from the South of Lebanon, is fresh, spicy, and aromatic, remarkably different from that of the North, mainly because of the hero ingredient Kammouneh that is used.

Foolproof One-Bowl Moist Choc Chip Banana Bread
A classic banana bread with a rich, chocolatey twist—this one-bowl wonder is soft, moist, and packed with flavour. With minimal clean-up and simple ingredients, it’s the perfect bake to use up those old ripe bananas. This recipe promises a deliciously moist, rich, and indulgent loaf with chocolate in every bite and is quick and easy to prepare, making it great for meal prep. The secret to its moistness is in using very ripe bananas.

Kammouneh is a dry bold spice blend rich in cumin (pronounced kammoun in Arabic), as well as rose petals, marjoram, mint, cinnamon, cloves, and black pepper, with each family in the region having their own unique recipe.

Frittata
Learn how to make a good frittata, and you’ll never be hungry again! Eggs, vegetables, and a little cheese come together for a perfect breakfast, lunch, or simple dinner. This recipe is very adaptable so use whatever is in your fridge! It’s a great place to use up half an onion, extra roasted vegetables, half a punnet of cherry tomatoes, or any leftover herbs.

A popular Middle Eastern breakfast dish and very easy to make. This dish features broad beans, fava beans, chickpeas, garlic, lemon, and extra virgin olive oil. I’ve added some fresh vegetables and boiled eggs as a side to make it satisfying for breakfast.

Garlic-Lemon Chicory
Chicory tossed in lemony and garlicky olive oil, topped with caramelised onions and a hint of chilli salt. Enjoy this vibrant and tangy side of greens with any protein you like.

Gluten-free Mandarin, Polenta & Coconut Cakes
