SKU: N/AA good mushroom ragu is a staple in the Clove Kitchen. It’s hearty, flavoursome and really good for you. We love a recipe that can be used in multiple ways and this one ticks a lot of boxes. Field mushrooms make this ragu dark and meaty, button mushrooms will lighten it up, or use a combination of mushrooms if that’s what you have. The trick to getting this recipe right is to cook the mushrooms slowly, a handful at a time. Don’t be tempted to chuck everything in one go!
If you love this ragu, try using it in our Mushroom and Spinach lasagne.

A good mushroom ragu is a staple in the Clove Kitchen. It’s hearty, flavoursome and really good for you. We love a recipe that can be used in multiple ways and this one ticks a lot of boxes. It can be served over polenta or mash, piled on top of fettuccine with lots of parmesan, the base of a vegetarian lasagne, or served straight on toast.

Miso fish curry with cauliflower rice. Perfect easy dinner for when you’re feeling like something full of flavour and minimal cals.

Miso Glazed Salmon
I enjoy making this recipe because it has a very similar flavour profile to the Black Cod Miso at Nobu but with minimal prep and effort.
This miso salmon recipe is a perfect balance of sweet, savoury, and umami flavours that elevate a simple piece of fish into something restaurant worthy.
The miso marinade not only enhances taste but also helps keep the salmon tender and juicy.
It’s quick and easy to prepare, making it ideal for busy weeknights without compromising on flavour.
Packed with healthy omega-3s and rich nutrients, it’s a nourishing option that feels indulgent.
Whether you’re cooking for yourself or entertaining guests, this dish is sure to impress with minimal effort.

Morning Berry Smoothie
Start the day with a pink smoothie – it’s a delicious way to fuel up with all the good stuff. The berries give you a boost of antioxidants and vitamins, while the oats keep you feeling full for longer. Almonds and hemp seeds add healthy fats and protein to keep your brain happy, and the Greek yoghurt keeps your gut happy!

Mushroom Ragu
A good mushroom ragu is a staple in the Clove Kitchen. It’s hearty, flavoursome and really good for you. We love a recipe that can be used in multiple ways and this one ticks a lot of boxes. It can be served over polenta or mash, piled on top of fettuccine with lots of parmesan, the base of a vegetarian lasagne, or served straight on toast.

Mushroom Risotto
Learning how to make a good risotto is a rite of passage. With simple ingredients you can nourish yourself and impress your dinner guests. Think of risotto as a blank canvas to highlight seasonal ingredients or use vegetables you already have in the fridge.
Mushroom risotto is an excellent place to start your risotto journey, it’s earthy, nutritious and oh-so satisfying. This recipe uses Swiss Brown and dried Porcini mushrooms as the hero ingredient, while featuring the classic process of toasting the rice, adding stock bit by bit, and stirring your way to creamy perfection.
It’s a slow and steady game that can make you fall in love with the simplicity of good home cooking.

Mushroom Soba Noodles
If you’ve been to Japan then you would be very familiar with a warming bowl of soba noodles. This is my take on the classic dish, ready in a matter of minutes it’s the perfect recipe for the cooler weather.

With just a few key ingredients, you create a rich, golden risotto that is both comforting and sophisticated.

Nalli Roganjosh
‘Roganjosh’ has rightly earned a reputation the world over as the ‘King of Curries.’ There are several versions. Even in Kashmir itself, where it hails from, it is prepared differently by different religious sects – each claiming authenticity. The following version with shanks is really hearty fare.

Oat Cookies
Oats, pepitas and raisins; these perfectly chewy cookies are somewhere between a muesli bar and a bowl of crunchy granola. Great for lunchboxes, great for snacks at work, perfect with a cup of tea when you need a pick me up. This recipe is a winner because you can mix and match – try sunflower seeds and cranberries, chopped almonds and currants, or walnuts and sultanas.
They’re easy to make if you have a mix master, but you can make them without one, just use a big bowl, a whisk and a bit of elbow grease.
Go on, there’s no need to be unsure! Clean out the pantry and make yourself some treats!

Olive Focaccia
You could add olives on top of your focaccia or you could fold them in like this. I think I’ll do it this way more often. Any focaccia recipe will do, but I have included a focaccia recipe I have shared previously. Simply fold in the olives.

Olive Oil and Orange Cake
This dairy-free olive oil and orange cake combines the natural sweetness of oranges with the rich, fruity depth of olive oil. Perfectly moist and fragrant, it’s an excellent alternative for those avoiding dairy without compromising on flavour. The balance of flavours makes it a versatile cake that works beautifully as a dessert, a teatime indulgence, or even a breakfast treat (for those like me who can justify cake for breakfast).

One Pot Creamy Tuscan Style Salmon 🐟
This creamy Tuscan-style salmon dish is perfect for a cozy Saturday night in. It features crispy-skinned salmon with a rich and flavorful sauce made from coconut milk, sundried tomatoes, capers, and onions.

One Pot Risoni with Olives and Cherry Tomatoes
This one pot risoni will soon be on your repeat recipe list. Juicy tomatoes, a little kick from the chilli, and lots of tang from black olives and lemon, make every mouthful a joy. It all cooks in one pot, so think of it like risotto with way less boring stirring.
Sprinkle each bowl of silky pasta with a roughly chopped parsley, almond and feta topping. The parsley brings the freshness, and gives you a big hit of vitamins, the almonds bring the crunch and a little protein, and the feta completes the party with its creamy, salty good vibes.
Simple, satisfying and summery, add it to your cooking plan for the week.

One Tray Chicken Fajitas
Who doesn’t love a one tray dinner? If you’re looking for a new weekly staple, try these simple chicken fajitas: a delicious, balanced meal that’s an easy crowd pleaser.
Unlike many other fajita recipes that require stovetop cooking, all that’s needed here is a quick marinade and some time in the oven. Serve them straight from the tray with tortillas and sour cream and let everyone make their own wraps!

One Tray Lamb Roast with Lentils and Spinach
One tray dinners are what we all wish for. This hearty lamb roast is cooked on a bed of lentils, mushrooms, and spinach and makes you feel like you know how to nourish yourself. It’s a well-rounded mix of protein, fibre, vitamins, and antioxidants, plus it’s really delicious and surprisingly simple to pull together.
The base goes into the oven, you sear the lamb, then nestle it on top of the lentils and cook to pink perfection!
This is a one tray roast for 2 people, using a small marinated lamb shoulder around 400-500g, available at supermarkets and butchers. Double the recipe if you’re feeding four.
The big handfuls of spinach mean you don’t need to make salad tonight.

One Tray Mediterranean Fish Bake
One tray meals are a dream dinner, and my favourite way to eat fish. The base of this recipe is delicious – garlicky white beans, cherry tomatoes and olives.
Topped with gremolata, which is just chopped parsley with lemon and garlic – it’s zesty and bright, and so green that you won’t need to make a salad!
Serve with crusty bread to soak up all the delicious juices.

One-bowl Chocolate Cupcakes
With an uncanny ability to please and charm both kids and adults alike, these chocolate cupcakes are heavenly, simple to make and perfect for any occasion.

One-pan Moroccan Style Chicken
Did someone say no chopping and only one pan to wash up? You heard right, this One-pan Moroccan-style Chicken just might become your new weekly staple. Orange, currants, cinnamon, and almonds meld with juicy chicken for a perfect weeknight dinner.
Add some greens in the last 5 minutes of cooking for a complete wholesome meal. If you want to add extra elements, you can serve this dish with couscous and a garlicky mint yoghurt.
